CHOCOLATE FUDGE PUDDING

This has been a family favourite since my children were tiny.










75g self raising flour

2 level tbsp cocoa powder

125g butter

125g caster sugar

2 eggs

½tsp vanilla essence

1-2tbsp milk

for the sauce

125g soft brown sugar

75g dark chocolate

300ml hot water





Sift the flour, cocoa powder and set aside. Place the butter and sugar in a bowl and whisk together until pale and fluffy. Add the eggs one at at time, whisking well between. Stir in the vanilla essence and then gently stir in the sifted flour. Spoon the mixture into a 1 litre oven proof dish. In a heatproof jug combine the sugar, chocolate and boiling water and stir until the chocolate has completely melted. Then pour over the cake mixture. Cook at 190°C for 30-40min or until the cake has risen to the top and the sauce underneath. Serve with cream or ice cream.
