Makes 32 squares
100g white or dark chocolate
175g soft brown sugar
2 large eggs
1 tsp vanilla essence
pinch of salt
90g plain flour
These gorgeous brownies make a perfect Father’s Day present. If they sound a bit fiddly or time is short, simply make one batch, dust well with icing sugar and serve with some berries.
You will need to make two batches of the brownies, one with white and one with dark chocolate
Place the chocolate and butter in a heatproof bowl and place over a saucepan of simmering water for 4-5min or until melted. then remove from the heat and stir until smooth. Add the sugar and beat well with a wooden spoon, then add the eggs and vanilla and finally the flour. Stir until well combined, then pour into a 20cm square cake tin, lined with tin foil. Cook at 180C for 25-30min (dark chocolate) and 30-35min (white chocolate). Leave in the tin for 10min, then lift the brownie out with the foil and leave to cool on a wire rack. Repeat the recipe with the white or dark chocolate.
When cool, cut each batch of brownies into 16 even sized squares, giving you a total of 32 brownie squares. Place the squares on a tray and freeze for 30min.
Using a star or a heart shaped cutter, carefully and slowly cut out a star or heart shape out of the centre of each brownie square and set aside. Then when you have done this place the dark cut out in the centre of each white chocolate brownie and each white cut out in the centre of each dark chocolate brownie. Return the brownies to the freezer if they become too soft to handle.
Arrange on a plate and chill for another 15min before serving.
