TIRAMISU





This delicious Italian pudding translates as pick me up! Its so delicious no one could feel sad after a bowlful of this! It is traditionally flavoured with coffee and rum which I have replaced with chocolate milk for a more child friendly version.


150ml chocolate milk flavoured with Cadbury's drinking chocolate

3 large eggs, separated

4tbsp caster sugar

250g mascarpone cheese

20 sponge fingers

50g milk, dark or white chocolate




  • Pour the chocolate milk into a wide, shallow dish.

  • Place the egg yolks in a bowl with the sugar and whisk together until very pale and thick.

  • In another spotlessly clean bowl, place the egg whites and whisk until white and stiff, a good test is to hold the bowl over your head, if the egg whites stay in place you have whisked them enough, if not.....

  • Then gently stir the mascarpone into the egg yolk mixture, a spoonful at a time, using the whisk.. When you have done this, you can add the whisked egg whites are stir to make a light mousse like mixture.

  • Spread a couple of spoonfuls of this mixture over the base of your serving dish. Then dip the sponge fingers into the chocolate milk and arrange on top, continue to layer up finishing with a layer of the mascarpone mousse. Grate over the chocolate and then chill for at least 6 hours though personally I think it is best made the day before, just depends if you can wait that long!
