FRUIT ROCKETS WITH CARAMEL DIPPING SAUCE

These went off with a bang!





for the sauce

175g light muscovado sugar

50g butter

225ml double cream


8 fireworks party cocktail sticks, (available from amazon)

for each pick you need a selection of ripe fruit, for the photo I used

4 blueberries

2 green grapes

1 cube of fresh or tinned in juice pineapple

1 strawberry, hulled


First make the sauce, place the sugar and butter in a small heavy based pan. Bring to the boil and cook stirring for 5 min, or until golden and bubbling, then remove from the heat and slowly add the cream. There will be a lot of bubbling and hissing. When it stops return the pan to a medium heat and cook, stirring all the time until smooth and thickened, set aside to cool.

Thread the fruit onto the skewers finishing with a strawberry. Serve with the dipping sauce.
