We have already made a mousse in class with eggs and chocolate, it is absolutely delicious but rather grown up. This mousse is made with marshmallows and I was amazed that any of them actually made it as far as the mousses when I think of how many where eaten when we made this at school!
150g mini marshmallows
50g butter
250g dark chocolate
50ml water
300ml double cream
1tsp vanilla extract
whipped cream and extra mini marshmallows to decorate
Put the marshmallows, butter, chocolate and water in a pan. Place over a low heat and cook, stirring until everything has melted, or place in a non metallic bowl, cover and cook on high in a microwave for 1-2min or until all the ingredients have melted. Stir until cool.
In a separate bowl whisk the cream and vanilla extract until it is thick and just holds its shape. Then add the chocolate mixture to the cream and stir with the whisk until smooth and blended. Pour or spoon the mixture into 4-6 glasses or ramekins, chill for an hour or so. To serve decorate with a spoonful of whipped cream and a sprinkling of mini marshmallows.
