ONION AND BACON CATHERINE WHEELS

Makes 8

These are best eaten outside, round a bonfire, watching the fireworks. Serve warm, straight from the oven with sticky sausages or chilli con carne.

For the dough

450g strong white flour

1tsp salt

ground black pepper

2tsp sugar

1½tsp dried yeast

320ml milk

50g butter, melted

For the filing

1 onion, peeled, halved and sliced

2tbsp olive oil

1 red and 1 yellow pepper, deseeded and sliced

75g streaky bacon, chopped

125g Cheddar cheese, grated

for the garlic butter

50g butter

1clove garlic

2tbsp chopped fresh parsley

First make your dough. Sift the flour, salt, pepper and sugar into a large bowl. Then stir in the yeast, milk and butter. With your hands mix everything up until it comes together in a messy ball. Turn the dough out onto a floured work surface and knead (by pushing the dough away from you with the heel of your hand, then drawing it back) for 10min, or until it is smooth and elastic.

Place the dough in a lightly oiled bowl and cover with cling film. Leave in a warm place for 2 hours, or until it has doubled in size.

Meanwhile place the onion and oil in a frying pan, cook for 10min or until golden and soft, add the bacon and cook for another 5min, then set aside. Add the peppers to the pan and cook for 10min, stirring occasionally until soft. Add to the onions and bacon.

Place the butter in a small pan with the crushed garlic clove, melt over a gentle heat then set aside.

Roll the dough out into a rectangle measuring 30x20cm. Cut into eight 10cm squares. Scatter the onion, bacon, peppers and Cheddar over the squares. With a pair of scissors snip each corner to within 2cm of the centre of each square. Then draw alternate corners to the centre of each square, overlapping each other. Place on a baking sheet and cook at 180C for 15min or until golden. Meanwhile place the butter and crushed garlic in a small pan, heat gently until melted. Remove from the Catherine Wheels from the oven, brush with the garlic butter and scatter over the chopped parsley. Serve at once!

Did you know? The Catherine Wheel is named after a 4tb century martyr. She was meant to be tied to a spiked wheel and left to die. However when Catherine touched the wheel it miraculously broke and flew into hundreds of tiny pieces!
