Makes about 20 biscuits
These delicious biscuits are easy to make and great entertainment for a wet afternoon! They are also a brilliant way to spend time with a new or shy friend!
100g butter, softened
100g caster sugar
1 egg
275g plain flour
2 drops vanilla essence
to decorate
400g icing sugar
food colourings
hundreds and thousands and small sweets
Place the butter and sugar in a bowl and beat with a wooden spoon until light and fluffy. Then break the egg into a cup and whisk with a fork. Gradually add the beaten egg to the sugar and butter mixture, beating all the time. Add the flour and the vanilla essence. Then using your hand bring the mixture together to make a smooth ball.
Roll the dough out on a lightly floured work surface to the thickness of a £1 coin. Using cutters, stamp out shapes and place the shapes on greased baking sheets. Gather up the trimmings and roll out to make more biscuits. Bake the biscuits at 190C for 10-12min or until they are golden brown. Leave to harden for a few minutes then transfer to a wire cooling rack.
Meanwhile for the icing, sift the icing sugar through a sieve into a large bowl. Add about 2-3tbsp hot water to the icing sugar to make a soft firm mixture. Divide into 3-4 bowls and add a few drops of colouring to each bowl. Spread the icing over the cooled biscuits and decorate with the small sweets.
