It was not a good day yesterday, things kept going wrong! So I was in just the right sort of mood to bash out pieces of pork to make them tender and delicious!
Makes 8
400g pork fillet or tenderloin
4 slices parma ham, each cut into four
4 slices Gryuere or Emmental cheese, each cut into four
4 sprigs of thyme, rosemary or sage
salt and ground black pepper
50g plain flour
2 eggs
125g fresh or dried white breadcrumbs
Cut the pork fillet into 16 slices, each about the thickness of a 1£ coin. Place the slices between sheets of clingfilm and then bash with a rolling pin to flatten and tenderise them. Remove the cling film and make eight pork sandwiches. Place a piece of Parma ham and a piece of cheese on top of each piece of pork. Top with a sprig of herb and season well. Sandwich two pieces of pork together with the ham and cheese in the middle. Secure with a cocktail stick.
Place the flour, beaten eggs and breadcrumbs in three different bowls. Coat each pork sandwich in the flour, then the egg and finally the crumbs.
Heat the oil in a large frying pan , add the pork sandwiches and cook for 5min on each side or until golden and cooked through. Keep in a warm place while you cook the remaining sandwiches.
