DOUBLE CHOCOLATE MUFFINS

Perfect for a quick afternoon snack when you are on the go! They are also super speedy to make



40g cocoa powder

240g plain flour

1tbsp baking powder

pinch of salt

250ml buttermilk

1tsp vanilla extract

2 eggs

115g melted butter or sunflower oil

130g soft brown sugar

100g white chocolate chips





Sieve the cocoa powder, flour, baking powder and salt into a large bowl. Whisk together the buttermilk, vanilla and eggs with the melted butter. Then combine the flour mixture with the egg mixture and the sugar. The mixture should not be smooth but at the same time you don't want any flour lumps. Finally stir in the white choc chips. Spoon the mixture into a 12 hole muffin tray lined with paper cups. Cook at 200°C for 15-20min or until risen and a toothpick inserted into a muffin comes out clean.
