SWEET AND SOUR TURKEY MEATBALLS WITH NOODLES

Ingredients:

200g rice noodles

1tbsp soy sauce

4tbsp tomato ketchup

1tbsp white wine vinegar

2tbsp soft brown sugar

4 spring onions, finely chopped

2 garlic cloves

2cm piece root ginger

3tbsp sunflower oil

250g minced turkey

4 good quality sausages, skins removed

1tbsp fish sauce

2tbsp chopped fresh coriander, optional

ground black pepper

cornflour

1 red pepper, deseeded and diced

1 small tin pineapple chunks, drained



  • Place the noodles in a large heatproof bowl and cover with boiling water, then set aside to cook and soften for 5min, stirring occasionally.

  • Combine the soy sauce, tomato ketchup, vinegar and sugar in a bowl and set aside.

  • Meanwhile place the spring onion, crushed garlic and ginger in a frying pan with 1tbsp oil and cook, stirring for 1min, then leave to cool.

  • Combine the turkey mince, sausage meat and spring onion mixture in a bowl with the fish sauce and coriander. Season with black pepper and then with floured hands roll the mixture into 16-18 balls.

  • Heat the remaining oil in a large frying pan and gently fry the pepper and the turkey balls for 10min or until golden and cooked through.

  • Add the sauce and the pineapple chunks and cook for anther 5min. Serve with the drained noodles and garnish with coriander sprigs.
