SWEET AND SOUR TURKEY MEATBALLS WITH NOODLES

Serves 4

200g rice noodles

1tbsp soy sauce

4tbsp tomato ketchup

1tbsp white wine vinegar

2tbsp soft brown sugar

4 spring onions, finely chopped

2 garlic cloves

2cm piece root ginger

3tbsp sunflower oil

250g minced turkey

4 good quality sausages, skins removed

1tbsp fish sauce

2tbsp chopped fresh coriander, optional

ground black pepper

cornflour

1 red pepper, deseeded and diced

1 small tin pineapple chunks, drained




Place the noodles in a large heatproof bowl and cover with boiling water, then set aside to cook and soften for 5min, stirring occasionally. Combine the soy sauce, tomato ketchup, vinegar and sugar in a bowl and set aside.

Meanwhile place the spring onion, crushed garlic and ginger in a frying pan with 1tbsp oil and cook, stirring for 1min, then leave to cool. Combine the turkey mince, sausage meat and spring onion mixture in a bowl with the fish sauce and coriander. Season with black pepper and then with floured hands roll the mixture into 16-18 balls.

Heat the remaining oil in a large frying pan and gently fry the pepper and the turkey balls for 10min or until golden and cooked through. Add the sauce and the pineapple chunks and cook for anther 5min. Serve with the drained noodles and garnish with coriander sprigs.
