I can't even begin to pretend that these are healthy but brown sugar is slightly better for you and it does give them a delicious flavour. Also I wanted to make something this week that might cheer up my year 6 students as they sit their school exams.
Makes about 24 biscuits
125g butter, softened
150g dark brown soft sugar
1 eggs
1 tablespoon vanilla extract
250g plain flour
½ teaspoon bicarbonate of soda
½ teaspoon baking powder
pinch of salt
In a large bowl, cream together the butter and brown sugar, until soft. Then add in the eggs and vanilla extract and beat until well blended. Combine the flour, bicarbonate of soda, baking powder and salt; stir into the creamed mixture. On a lightly floured surface, roll the dough out to the thickness of a £1 coin. Cut into desired shapes with cutters. Place biscuits 4cm apart onto greased baking trays.
Cook the biscuits at 180°C for 8 to 10 minutes in the preheated oven. Allow biscuits to cool on baking tray for 5 mins before moving to a wire rack to cool completely. Decorate with your favourite icing and/or sprinkles, if desired.
