SALMON FILLETS WITH A HERB CRUST






4x 150g salmon fillets, skinned

salt and freshly ground black pepper

125g cream cheese

1 garlic clove , crushed

½ lemon,

25g fresh white breadcrumbs

25g grated parmesan cheese

2 tbsp chopped parsley

½tsp smoked paprika

1tbsp sunflower oil


Place the salmon fillets in a roasting tin and season well. Then place the cream cheese in a bowl, add the garlic, salt and pepper and lemon rind and stir well. Then spread even amounts of the cheese mixture over the top of each salmon fillet.

Combine the breadcrumbs, parmesan and parsley in a small bowl and season.

Sprinkle on top of the cream cheese mixture and dust with the smoked paprika. Drizzle over the oil and then cook at 200C for about 15 minutes. To tell when the salmon is done, it will have changed from translucent to an opaque pink.

Serve immediately with boiled new potatoes.
