BANANA BREAD

No chocolate, no nuts, pure banana

4 bannas

115g butter, melted

190g soft brown sugar

2 eggs

260g plain flour

1tsp bicarbonate of soda

1tsp ground cinnamon

1tsp baking powder

2tbsp demerara sugar



Place the bananas in a bowl and mash.

Pour in the melted butter and then mix in the sugar. Add the eggs, one at a time and beat to combine. Sift over the flour, cinnamon, bicarb and baking powder and fold in. Scrape the mixture out of the bowl into a 22x12 cm greaseproof paper lined loaf tin. Sprinkle the Demerara sugar over the top and cook at 175°C for 40-50 min or until a skewer inserted in the loaf comes out clean. Leave to cool in the tin before serving. The first slices will be crunchy and cinnamony then after a day or two the banana flavour really comes through and a slice is delicious slathered in butter.
