CHICKEN FAJITAS


This makes 4 fajitas


1 onion

1 red pepper

1 skinless and boneless chicken breast

2 limes

1/2 tsp ground cumin

1 teaspoon smoked paprika

salt and ground black pepper

3tbsp olive oil

1 avocado

1 small bunch coriander, roughly chopped

150g cherry tomatoes, halved

1/2 red chilli, finely chopped optional

4 flour tortillas

50g Cheddar cheese, grated

150ml natural Greek yoghurt

1 bag doritos


Peel and halve the onion, halve and deseed the pepper. Slice the onion and pepper into thin strips and place in a large non metallic bowl. Cut the chicken breasts lengthways into long strips and add to the bowl with the onion and pepper. Squeeze over the juice of a lime and season with the cumin, paprika, salt and pepper. Toss together. 

Heat a non stick large frying pan in a hot oven 200C, then add 2tbsp olive oil and the chicken and pepper mixture. Return to the oven and leave to cook for 15-20min, turning occasionally or until the chicken is golden and cooked through. Then remove from the oven and set aside.

Meanwhile to make the salsa, halve and stone the avocado, roughly chop the flesh and place in a small bowl with the coriander, tomatoes and chilli if using. Season with a squeeze of lime juice, salt and pepper.

To serve, spread a spoonful of yoghurt over a  warm tortilla add some of the chivcken mixture and top with grated cheese. Fold in half and eat at once with the salsa  and doritos.
