Serves 4

These are just as delicious if you replace the pork with chicken

for the sauce

6tbsp tomato ketchup

2tbsp maple syrup

2tbsp dark soy sauce

grated rind and juice of 1 lime

1 garlic clove, peeled and crushed

2tbsp soft brown sugar

for the skewers

4 pork loin steaks

1 red pepper, deseeded and cut into chunks

½ courgette, cut into chunks

1 red onion, peeled and cut into wedges

steamed rice to serve

Place all the sauce ingredients in a small pan, bring to the boil and simmer for 2min then set aside to cool.

Meanwhile cut the pork into bite sized pieces place in a bowl, pour over the sauce, stir to coat and set aside for 30min to marinate. Carefully thread pieces of the pork onto skewers along with the vegetables, repeat until everything has been used up. Place on a foil lined baking sheet and cook at 200°C for 15-20min or under a hot grill for 10-15min.
