Makes 1 loaf
My children adore banana bread and a lot of research has gone into finding their definitive loaf and this is it! What plain or spread with butter or cream cheese. If there isn’t enough chocolate for your tastebuds you could always add a thick layer of Nutella!
250g ripe bananas 250g self raising flour 150g soft brown sugar 100g butter, melted 2 large eggs 75g plain chocolate, chopped 100g walnut pieces
Peel the bananas and place in a large bowl and roughly mash with a fork, there should still be some lumpy bits. Sift over the flour and sugar. Add the butter, eggs, chocolate and nuts. Stir with a wooden spoon until throughly combined. Line a 900g loaf tin with greaseproof paper and spoon the mixture into the prepared tin. Bake at 180C for 50-60mins or until a skewer or cocktail stick inserted into the centre of the cake comes out clean. Leave to cool for 10min, then turn out to cool on a wire rack before slicing and eating.

You can run the inside of a banana peel on a mosquito bite and it will help keep it from itching and getting inflamed. Or if you tape a banana peel over a splinter, the enzymes help the splinter work its way out of your skin (and also heal the wound).
